About the Baker
For over 15 years, Christina “Tini” Henrich owned and operated successful equestrian centers in Jamaica and South Londonderry, Vermont where she trained horses, managed boardding facilities, and ran complex businesses with heart and precision. Recently she has specialized in training stallions and consulting for barns and equestrian centers, blending deep horsemanship with practical business savvy.
Tini’s roots run deep in Vermont and Austria. Her family, including her father Emo Henrich and her mother Ann Henrich, played a key role in Stratton Mountain’s early days. Tini herself was a student, ski instructor, and racing coach at Stratton Mountain School, continuing a legacy of mentorship. She also grew up helping her mother run Haus Emo & Birkenhaus, the family’s renowned gourmet restaurant and Inns, gaining hands-on experience in hospitality and European Cuisine.
Today, Tini combines equestrian consulting with her passion for baking as founder of The Skinny Goose Bakery in Jamaica, Vermont. Her European inspired breads and pastries reflect the same craftmanship and joy that define her work with horses.
